This collaboration brings together three exceptional talents, each contributing a unique vision to celebrate Australia’s native flavours. Executive Chef Jamie Musgrave leads Restaurant Botanic, named Best Restaurant in Australia by Gourmet Traveller in 2023 and recently awarded Best National Food and Wine Pairing by the Australian Wine List of the Year Awards. Musgrave is passionate about blending seasonal, locally sourced ingredients with curated wine pairings. Joining him is Tom Tilbury of Botanic Lodge, whose commitment to sustainability and ethical sourcing is reflected in every dish, and Jack Bird of Blanco Horner Catering, an industry innovator known for his dedication to high-quality, refined dining experiences. Together, they create a harmonious celebration of Australian culinary artistry.
Guests will enjoy a beautifully curated selection of shared entrées and mains that showcase bold native flavours, featuring dishes like pepperberry-rubbed eye fillet and bunya nut paired with sunrise lime. Each course highlights seasonal ingredients with creative flair, finishing with a distinctly Australian dessert and petit four.

The cost for the public to book a seat will be $79 per person, which will be the cost of a full meal for per person including 2 course shared entrees on arrival, shared main platters of 2 selection meats, vegetables, salad, bread, and dessert.
