Sanctuary Restaurant returns to WOMADelaide for its third year with a renewed celebration of native Australian ingredients, bold seasonal cooking, and a premium pop-up experience set above the Adelaide Zoo. This exclusive festival dining destination offers a place to pause, connect, and savour a shared menu where contemporary technique meets the richness of Australia’s native pantry.
Curated by the Blanco Horner Hospitality Group — the team behind Restaurant Botanic and Botanic Lodge — Australia’s Native Table invites guests to slow down and savour a thoughtfully crafted set menu featuring the finest local produce. Designed for a seamless dining experience, the menu caters to all dietary preferences, with vegetarian/ vegan, gluten-free, nut-free, and pescatarian options available.
This year’s menu is bold, balanced, and distinctly seasonal. Guests will begin with sourdough and caramelised onion butter, warm olives with fried saltbush, and vibrant starters like torched prawn with lemon myrtle apple, or pickled pumpkin with goat’s cheese and pepita salsa. Shared mains include wattle seed lamb and roasted chicken with fermented poblano butter, served alongside garden-inspired sides. To finish: a stunning Davidson plum chocolate marquise with crème fraîche and pepperberry strawberries.
